I’ve had many, many roast chickens in all my life but I must say that after 35 years, I’ve finally tasted the best. Ever. Today. My mother’s roast chicken is pretty good too but since she is Muslim, her cooking loses out sometimes for the lack of oinks.

The Hubs and Tee cooked me the best roast chicken today. All they did was marinade the chicken with oyster sauce and honey with a dash of black pepper. Then they added water and mix, mix, mix (this is where Tee has fun), then added garlic, large onions, ham bits, already cooked potatoes and carrots and tomatoes into the oven with the chicken. After 45 minutes, they served it with steamed brocolli and mash. I’ve never added water to my roasts before but now that I’ve tasted it with water, it kind of makes sense because all the flavours get mixed into the water sauce and then this in turn seeps into the chicken. Tip: separate potatoes, tomatoes and carrots if you don’t like wet vegetables. Bake on another tray.

It was heaven.

And whilst I write this post, Tee is saying, “And I awso cut the bwocowwi, Mummy…..you wite that, OK? OK, how about you wite that I sing this song? Kiss me, honey-honey, kiss me….”

And no, she never went about chasing people for sales. She had a sophisticated system work for her through technology and a smartphone.

She now impacts lives authentically with proven strategies amassed through the last decade of her own transformation offering online coaching programmes and always supports the underprivileged. She believes that we can all have a life of our own desires to enable real contribution into the world. But first, one needs to understand what this all means.
